Was it the Breeders initiative that forced the NZ Derby from Boxing Day? As I recall the Boxing Day Derby winner often went on to greater and bigger things. Always a big crowd oncourse and a bigger crowd watching on TV1.

Yes well they often have the fixed odds up for those American gallop AND trots well before local events. Plus I'd imagine given the lack of liquidity that there must be some inherent risk for a bookie.
