Who in their right mind would feed bread with poppy seeds?

No-one.

That said, several have used the excuse (as if there is an excuse for a dog with morphine in it). In the McInerney case, he claimed that poppy seeds in bread could possibly cause a Codeine positive.

Not correct.  They are not imitation and can contain enough morphine to register in a blood test.  That is a documented fact.  However they need to be fed within 12 to 24 hours to show up in a test.

In saying that I wouldn't have thought feeding racing dogs bread was optimal nutrition!

Bread is a good replacement for kibble in a racing dogs diet. Saying that, ive never fed it personally, but i know many who do

Why would you give a racing dog poppy seeded stale bread within 24 hours of racing?

Short answer you wouldn't, at least, not poppy bread. But nothing wrong with feeding stale brown bread before racing with a little am lamb milk. It is a good way to get some electrolytes and vitamin E into dog before racing without it being to heavy on the dogs stomach.
